So last week I was looking for a simple recipe for a cookie. No one had any great ideas so I thought I would share the one that I found. It was yummy. I took a recipe from Paula Deen. We all know she is the best southern cook out there not to mention quite entertaining.
So here is the recipe that I used!

1 (8-ounce) brick cream cheese, room temperature 1 stick butter, at room temperature 1 egg 1 teaspoon vanilla extract 1 (18-ounce) box moist chocolate cake mix Confectioners' sugar, for dusting.

1 (8-ounce) brick cream cheese, room temperature 1 stick butter, at room temperature 1 egg 1 teaspoon vanilla extract 1 (18-ounce) box moist chocolate cake mix Confectioners' sugar, for dusting.
Preheat oven to 350 degrees F.
In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner's sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and "gooey." Cool completely and sprinkle with more confectioners' sugar, if desired.
Be sure to chill it! Don't forget to put confectioner's sugar on your hands or the rolling pin whatever you decide to use. I found for the big cookie using my hands was easier. It turned out very yummy! I sprinkled a little more sugar on the top and then some purple and pink sugar crystals just for fun. It tasted very yummy and Anna really enjoyed it. The best part was it wasn't overly sweet and didn't have to much sugar in it. I used a pizza cutter to cut it because it was fluffy and thick. So thank you Paula Deen for your great idea!!!

ReplyDeleteI don't really make cookies well in all honesty I was a very bad cook and I am actually now on a mission to improve! When I did a quick surf I didn't find any that I considered easy and then I remembered a cheerio cookie I use to make, don't have the recipe so I am now practising...the oven is preheating......I will post if it is a success.....if you never hear about it again, you know it wasn't LOL
